butternut squash mac 'n cheez, roasted halved baby carrots, & boca burgers
Tonight, I made the Butternut Squash Mac 'n Cheeze from Oh She Glows - with a few adjustments, naturally. The cheez sauce was delicious. I didn't have quite enough butternut squash, so I added 1/2 cup soaked raw cashews, puréed (cashews are great for vegan cheez recipes, & this was no exception). My "mix-ins" of choice were 2 large green onions, 1 1/2 medium zucchini, & 1/2 a red bell pepper (sautéed before adding to the mac & cheez). I also baked my mac for a bit after topping it with breadcrumbs, black pepper, & Italian seasoning.
I quite easily prepared some roasted halved baby carrots (olive oil, sea salt, black pepper), sautéed red onions + garlic (in olive oil & sea salt), pan-fried some original vegan Boca burgers, sliced up some tomatoes, & washed some organic arugula. Grab a burger bun & dinner is served!
